Have a go at a pair of these Norm's designs - English Oak, brass fittings from Rockler:

The design appears to have been made with the assumption that a bandsaw is available.

With all the info so far, I'm thinking Iroko is seemingly the best choice, both durable and cheap, and reasonably easy to hand-work.

Yeah - just need a high EP plane to avoid tear out. Iroko takes a beautiful high finish. Used to be used for museum cabinets and high class shop fittings IIRC.
