Now sorted, thanks for your help guys, thanks especially to powertools, I bought a granite worktop saver from Sainsburys, only problem is the wife wants one too!!!

Are the granite worktop savers definitely flat? I just put a quote in to my local stone mason and got a quote of £50 + vat for any offcut under 0.25m2, not only that but it takes then 3-4 weeks for them to polish it!!!!

One of my current full time students has joined us after working as a granite machinist and polisher for the past ten years, when I introduced my students to scary sharp on glass his advice to us was don't rely on granite worktops for flatness. I do have a 100mm thick granite inspection block for testing plane soles which is very flat but designed and manufactured for that purpose. We use 6mm float for scary sharp if its A4 size but 10mm for longer pieces for plane reconditioning.
