The method I think I'll use is DC's. He clamps the two leaves together between two sheets of 18mm MDF with the veneer protruding about 25mm out from the edge. He then 'shoots' them, but the plane does not ride on a fence arrangement, just a flat bench. The idea is that when the leaves are opened out like a book they will match perfectly.

Obviously DC explains this better than me. It's DVD 4 IIRC, Advance Hand Planing Techniques. (a DVD on hand planes, not veneer.)

25mm...that ought to be 2.5mm methinks for shooting veneer. A veneer shoot is really the only way to give yourself a fighting chance of making a decent job of joining veneers together, and I've tried all ways. They can be knife cut with a straight edge and stanley knife if you're very lucky and have a delicate touch...and if the veneer is reasonably straight grained. Anything remotely 'wavy' and you're on a hiding to nothing - Rob
 
I pretty much use pva for all my veneering and must have done hundreds of panels. You need to use a D3 or D4 grade to avoid creep and you need to get a thin even layer of glue down quickly. I use a pizzi gluing roller but you should be able to do a small area with a mini gloss roller. I always shoot my veneers in with a sharp no 7 handplane with as little overhang as possible on the shooting board. For your size of panel you should just be able to clamp it up a vice i would have thought.
