Kitchen Door Finish

Can anybody help with some recommendations on kitchen door finishes.

I need to touch up some very minor defects on some kitchen units which are about 12 years old - maple stained cherry.
I have found a spirit dye which matches the colour, but what sort of finish did they use back then? I do not fancy spraying the whole doors and hope to get away with a touch up brush? The original varnish is fairly matt looking perhaps a slight sheen?

They probably used the same sort of finish "back then" as they tend to nowadays, acid catalysed 2-pack lacquer, a material which unfortunately is awkward to repair without the right gear. The stuff is impervious to many strippers and pine dippers actually use a special highly aggresive stripper as caustic soda isn't effective on AC lacquers.

As Scrit says, this is an awkward one.

Myself, I would clean the doors up with sugar soap, give them a light hand sand, touch up the damaged bits, and then respray them completely with a couple of coats of AC lacquer.

I have seen professional repairers get good results with all sorts of magical products - wax sticks, aerosol cans of various lacquers etc, but this is a specialist job beyond the DIYer. If you do want a go the finishing supplies companies such as Morrells sell the gear.
