Interesting question.
Presumably you are asking about coping gouges with the bevel on the inside.... so-called in-cannel gouges?
The external curve should all be sectors of a circle, in the same way that carvers' gouges inside face is.
When I need to know the exact radius of a sweep of a gouge, I tend to use an engineers' radius gauge.
