Hello,
I have a very useful Sealey soft start bench grinder with 150mm wheels on each end. The problem I have is that the motor in the middle gets in the way so it is impossible to use for sharpening knives and longer blades. It does of fine job for sharpening drills and chisels etc but I wanted to get something where the motor doesn’t get in the way. There are metal guards around the wheels which could be removed but then I would have a lot of detritus thrown around the workshop so not a good idea. Unfortunately due to the metal guards around the wheels a wider wheel I bought can’t be used. To me it just looks like bad design and not something I considered at the time of purchase. Ideally a replacement machine would take the wheels I have but can’t use. Thanks for any advice in advance,

Probably need an 8" machine or bigger. A machine with a belt on one end would also possibly resolve the problem.
Don't remove the guard on any grinding wheels. It's there to contain the wheel if it bursts, not just to keep the workshop clean.

Professional knife sharpeners usually use belt grinders.
1"x30" (25x762 mm) models are very popular. They are lightweight, compact, and suitable for sharpening all types of blades.

Most less expensive knife-sharpening jigs are designed for belt grinders.
Switching belts is relatively quick (much faster than a grinding wheel), allowing you to progress through multiple grits in one session.

If you decide to look for one, try to find a model with just the belt or one with a belt and grinding disc (as opposed to a sanding disc).
A sanding disc on the right side constantly gets in the way. I had to cover mine permanently to avoid scratching my palm on it.
