I read somewhere that if very thin shims are needed, best to buy a set of feller guages and use them for the shims. Not very expensive and saves trying to find material thin enough.

Engineering suppliers sell strips of shim stock Alex. I think it may be sold by the metre as a mate gave me half a metre of several different thicknesses. I think it's available in steel and brass. I think feeler blades may be tougher to punch than shim stock.

You can buy packs of mixed shim sheet which is easy to cut up and lasts a very long time, can't remember how long I've had mine which are about 200 x 100mm.
Metalworking or modeling supplies if I recall.

Coke and beer cans are very usefull for untra thin shims and easy to just build up layers. Cut it with scissors or a stanley knife.
