I've got a old shed with solid stone walls. did think about lime plastering it for a workshop improvement but maybe too much work.

Should i internally stud wall it and fit 2" kinspan in between?

What do you reckon for the sides? ply, osb or plasterboard? I'm quite happy to be a cheap skate and perhaps plasterboard rather than ply and maybe mount some ply on top in one area for a toolboard?

Currently concrete floor. Not sure whether to joist it and ply it or to just by some rubber matting. Fancy a bit of winter work but don't want to spend too much on insualtion etc.
 
I'd go with 18 mm ply for sheeting the walls, if possible on your budget. That way you can put cupboards, tool holders etc. wherever you like, without bothering about where the studs are. Also, plasterboard in a workshop is just asking to get dinged, I know it would in mine.
 
If the walls are flat I would use celotex with OSB over it (no studs) fix with masonry screws directly into the stone
mabe render the stone first to get flat cheaper than studs I did this into brickwork works a treat
