The Rali planes use the same basic idea as the Blum ones and the OPs proposal - a thin cutting blade held in a very rigid mounting. The Rali blades were originally throw-away but they do sell a jig for sharpening them. Most people don't seem to see them as fine craft tools but they have their enthusiasts. I've seen them on sale in Switzerland but never used one.
