Pal from work has just brought round two brace of pheasants. 15 mins for me to skin and draw 4 birds...blood, guts and fevers everywhere in SWIMBO's kitchen. Straight into the freezer...yum :lol: - Rob

D'you not hang them? I prefer them when they are a bit high although not at the stage which I have come across before:

Chat ceases instantaneously around the dinner table when guest enquires of host how she managed to stuff the breasts with wild rice; host answers perplexed that she didn't stuff them......

I quite like pheasant, but only when it is fresh - can't seem to acquire the taste for game I'm afraid. :sick:

The lead shot can be a bit off-putting as well - especially if you don't notice and bite down on one!

That's what cured me! A loose filling, or a tender tooth, and the lead can hurt like hell!

Just found a nice recipe to casserole a pheasant with dessert and cooking apples, Normandy cider, celery, Calvados and double cream - Rob
 
They don't half make a dent in the front of your van if you hit one at speed.

Faisin a la Normande - marvellous. Not a meal to suggest a walk after though - more a good doze in front of the fire.

while i was staying in sussex from september to december on a course i had quite a few pheasants all without lead shot! easy realy i just shot them in the head with one of my trusty air rifles! very clean instant kills


talking of lead shot tho while i was on my course i was planeing up a pieace of walnut only to find about a dozen little lead pelets embeded in the middle!
