New doors - what finish?

I've just purchased some new pine internal doors and I didn't want to put anything on them that would make them glossy.

would something like Danish Oil be a good finish?

It really depends which manufacturer you choose. All supplier's Danish Oils are slightly different. If your after a flat finish and have the time to spare then what about Tung Oil? The only problem is that the drying time is a couple/few days between coats.
