From what I've seen of Paul Sellers he has a well thought through and structured approach to learning woodwork, and I think he's absolutely right to incorporate quite a bit of shaping work (i.e. this project) early on in his syllabus. The workshop where I apprenticed took a similar approach, and their programme kept including shaping tasks like this alongside the more traditional jointing and timber preparation challenges. It builds your confidence, tool handling skills, gives a deeper understanding of timber as a material, and will prepare you well for later on in your woodworking career when you'll be confronted with furniture challenges that can't always be solved with straight lines and 90 degree angles.
