Books are good but tend to have a very particular view of whatever current practice is/was/should-be. Different editions of the same book get updated and changed.
The very best source of info on old joinery is old joinery itself. Even if you just saw it up for firewood make a point of looking at every detail and asking yourself how/why etc.

Tomorrow, I'm going to saw up my next door neighbour's original Victorian sash windows and then burn them in the garden. It is mainly because I don't like them very much, but I'll learn a bit about joinery whilst I'm at it. :lol:

Or I could read a book!

Jacob's got an old chapel in Derbyshire; Victorian era, I think. And the chapel. If anybody feels like sawing that up, I'm sure there would be scope for learning. No doubt as Jacob advocates this method of learning, he'd be amenable.
 
Great though the classic books on joinery are, they dont provide information or detailing for double glazing, draught sealing, detailing for paint finishes or compliance to building regs.

I would suggest doing a bit of googling to find sectional drawings that show these find of details. Whitehill tooling has some good examples, also reddiseals for box sashes and some large joinery companies have downloadable sectional drawings. All of these are very useful for complementing the traditional joinery techniques in George Ellis etc.
