I'm just wondering if, CS is having so much difficulty with boards moving after his initial stock prep and before smoothing, is he taking all his waste off of one side only?
 
No I don't think so. He's writing about small movements, almost imperceptible.

Just take a thicker shaving and be done with it.
 
When I have to prepare stock a few days in advance, to prevent movement after planing, I stack them unstickered and cover
everything with a tarp (or anything else that will prevent exchange of moisture with the atmosphere).
If it's a matter of internal stress, I know no other method than to 'sneak up' to the final dimensions over a couple of
days or weeks better still.
