Jason is spot on, it's unlikely there will be much in the way of offcuts on site, particularly with such a large job.
One of the reasons I use Mistral is the standard 25mm thickness which is just enough to be able to use as a benchtop without lamination. I've just done 3 kitchens in quick succession, all were off the back of my own which was quite a lot of benchtops. This and some of the other materials are different to corian in that they are usually fabricated on site by the fitter and it does create a hell of a mess in the process Extraction is definately a must!
Cut outs are easy using a jigsaw then template and router, straight cuts with a circular saw then router. joins using seaming clamps or glued blocks (I made up some clamps) and the polishing process with an ROS and abranet disks. The material is pre- finished to 400 grit and I went to 600 then pads and polish to give a satin finish. it is possible to get a gloss finish with finer grades and then abralon disks / polishing pads / compound but not the best finish for kitchen worktops as will show minor scratches (if your wife is anything like mine :? )
