The pig cutter isn't even the scariest one. The guy cutting up chickens later in the video is getting his hands seriously close to the blade.

It does look very dangerous, agreed. But I think it's made worse by the camera angle. From his point of view, he is looking straight on, and you'll notice his hands always move the piece forwards, with his hands either side by a good distance.
