No I'm not talking about Brad's turnover again :roll: :wink:

Since I've been on the strong pain killers, I've been largely off my food and so cooking as been reduced to whatever's easy and bland. But one thing I continue to do regularly is make bread.

Saturday night we went to an Italian fancy dress night (I went as super mario :roll: ). I made Sundried tomato and Rosemary Foccacia (both ingredients homegrown). It was flipping delicious!! I ate so much I couldn't finish my main course ;)

Anyone else do this?

I've made my own bread for 20-odd years and would never think of actually buying a loaf. You can get good bread, but the stuff out of CHorley Wood is an abomination! I buy my flour from a mill in Derbyshire - 1/3 granary and 2/3 wholemeal.

I used to do it all by hand, but I how use a machine - it kneads it longer than I would. The problem is that every new batch of flour is different, so what was the perfect recipe last week is not this week. Same when I buy a new bag of yeast. ATM I'm still struggling to get the right balance.

For the fancy loaves I just use the machine to make the dough and then do the proving and baking by hand.

I used to have a machine but gave it away. At the time I preferred to do it all by hand but I must admit kneeding has become hard work. I use the magimix for pizza dough but find it too aggressive for bread.
 
I'd have thought you were a better match for Luigi, given your height! :D Are we talking Mario-Mario or... Bob Hoskins-Mario?!? :shock: :?

I have worn out one bread maker and am on the second pan for the current one.
I love a good malted grain flour, just bought a new bag of oak smoked flour. 8)
How can I go wrong bread with an oak connection. :lol:

I've got back into bread making recently. I used to use the bread machine but find it quicker and easier to do it by hand now. The best thing I've found is sachets of yeast. This means every loaf I make has freshly opened yeast.

The other week I tried a carrot & coriander focaccia. Would have gone well with a curry. I also enjoy doing my own pizza dough.

A bag lasts me over a year and although that might be within its theoretical shelf life, I often find that a new bag is more fecund than the one I've just finished.

My Mum used to make her own bread when we were kids. It was bloody awful. As a result my bread comes in a plastic wrapper from the supermarket
