They swim, quite well.
The BBC's Springwatch tested this out earlier in the year, entertainingly. They evidently don't like geting wet, but would if needs must.

Ours seemed to love Cadburys Fredo's. We border a field too, so get a heck of a lot of rodents of all forms in and around. Fortunately, after one massacre a few years back when we counted no less than 20 mice caught in a month, they have gotten wise and now seem to give our garage a wide birth. Mice are pretty smart really.
