It's an interesting question but as far as I know there's nothing like that round here.

An easy option (and one I have used in the past) used to be to sign up for an evening class - instructors would be quite happy to find that some of their students did not want much tuition and really only wanted time in a spacious, well-equipped workshop. It used to be the case that you could almost pick which school was handy for you and go to a course held there, but evening classes have shrunk to a shadow of what they once were and school workshops may not be much use for what you want to do.

Looking at the current offerings for Bristol (https://adultlearning.bristol.gov.uk/courses/default.aspx) I could only find a beginner's woodwork course in St Paul's and a furniture restoration course at Kingswood; there was nothing about what facilities they have.)

If you happen to be female, the long-established Bristol Women's Workshop in Totterdown is still going - but again that may not be what you need!
