Hi people, quite a newbie on here, but I bought a solid oak table some time back from an auction house, it looks like it's been outside as all the finish has gone, I was wondering the best finish to put on it, wax, oil or french polish? I plan to use it as a dining table, I don't like varnish

You definitely need a proper MDF primer, also MDF edge primer, as for a final finish I would suggest you use an acrylic eggshell for such a large area indoors.
