Do people have any tips for working on the ends of boards, cutting dovetails etc, whose length means that they stick out significantly above the bench and vice when the other end is resting on the floor?
I tend to kneel in a praying position at the end of the bench cursing the length of wood as I cut. I appreciate this may not be the best advice though.

Well I cut my DTs on a bandsaw, so length isn't an issue.
But if I had to do it upright, I'd make a vertical braced board that clamps to the bench and sits behind the workpiece, clamped to it, to help stabilize it.
You may also have to stand on a step to make you working height more comfortqable. Depends on the board, of course.
Seriously though, you can clamp them to saw horses, and use your own weight to hold it down. It's a bit more awkward than having the board upright, but quite doable.
