Having talked through the options and the relative pros and cons of each, she's decided to go down the route of osmo wood protector and then osmo top oil as a finishing coat.

Main reasons being to retain a more natural wood finish, and to eliminate possibility of flaking. She's aware it will need maintenance and recoating (potentially annually but I'm hoping every 2 years will be fine).

Kind of keeping my fingers crossed a bit, although I don't think it's a bad choice... I'm not convinced it's the right or best one. Then again, I guess there's no such thing with finishes necessarily 🤷‍♂️
