I think the stuff she is doing is great and as you can see from my photobucket site I do some too and love it!
I made a box for my pyro kit from MDF (Wash my mouth out!) and when I do anything I use the box as a hand steady and hold the item at the side. If the item is too big that it's not difficult you just go into 'leg juggling' mode!!
The trick that I use to start is to print out the pattern of what I am going to pyro, tape it to the item to be pyroed and to transfer the pattern to the piece with carbon paper, but keep the original to the very basic shapes. From there you can fill in the detail. Don't get complicated at the start.

Just thought? When I am burning I have a tiny fan that came out of a computer (about 2" square) when I was doing an upgrade. It runs off 12v and very little current. I mounted it on a small bit of board with double sided tape and use it to blow the smoke away from me when I am 'burning me bits'. I takes the smoke away without cooling the pen and makes like a lot more comfortable..
