An alloy rebating head with a diameter of 125mm and a 30mm bore and one like this Charnwood Ebay 401171925096 100mm with a 30mm bore, which has been made to fit a recessed nut. How deep a rebate could be made with either of these heads?

Whitehill make a block which can accommodate a fully recessed fixing to the spindle. It is intended for tenoning on the spindle. In theory you can then rebate as far as you want. In practice you need to take small increments and the issue becomes one of stability the piece of timber. For tenoning you need to be able to secure the piece so it will not move and have a good backing board to stop break out. It is not a task to embark upon lightly.
 
Most spindles use 50mm dia spacers, so a 125mm block will rebate up to 37mm deep.

Ok, thanks for the clarification. If the block has a recess for the screw, nut, assume can pass over the top and do a deeper rebate?
Or am I on the wrong page for this one?
