The long bit with the hexagon and brass screw is the angle guide. So you set the angle you want parallel to the base or your square, and tighten the screw. Then you place the chisel or plane blade into the roller and clamp using its brass screw just tight enough to hold the blade in place. Then offer the blade to the gauge and adjust the length protruding out of the roller until it sits perfectly in the gauge then clamp it tight That means the angle is set exactly to the chosen angle on the gauge. So for example you set it to 25 for the secondary bevel or 30 if you need to re-grind the main bevel. Hope that makes sense.
