In the day when men were men and to earn a living as a joiner you did everything by hand having a stay set that saved a few minutes was a blessing. Today, only hobby wood workers or perhaps extremely high end cabinet makers would use a hand plane sufficiently to wonder about the time saving. For hobby wood workers I guess it’s more about loving the tools as to whether you want a stay set versus actually any real benefit

This literally anything that made life bearable not so much easier! Those guys slept. Hence every older operation on wood starts rough(axe)better(drawknife/scrub) fine(spokeshave /smoother) finish(scraper) it's just monumentally quicker that way. Sharpening the same.
