Hi, I’m after an olive splitter for domestic water / heating applications. I’d like it to be able to cope with 8mm all the way up to 28mm and be effective in plastic as well as copper. Does such a thing exist

it can be hard to get olives onto plastic pipe before they've been tightened let alone after. I've cut olives using a dremel then when your close to the pipe put a screwdriver in the slot then twist. use the fernox silicon paste on that bit of pipe in case it's scratched it.
 
I've got a pair of olive cutters (look like a pair of pliers in a way). They make it so much easier to remove an olive - way better than with a min' (typical 6") metal bladed hacksaw.

Monument and Ox Pro (amongst others of course) make them. They are designed to fit over the olive and then you simply squeeze hard to penetrate/cut the olive; after-which it can be removed. You'd need one pair for each pipe diameter.

Some olives will cut more easily than others.., brss being the hardest. You can't use these cutters on steel olives..
