No point in ultra flat stones as they would start becoming less so as fast as you used them.
If it's just for the usual then thin paper backed wet n dry, used very wet on plate glass or similar, is just the job. Made for it in fact. It sticks down very well once wet and you keep it flooded, but it's still easy to remove and replace.
