Jones doesn't mention it, but I'll quote Hooper and Wells in their awesome entirety.

"...and the curved top is executed by cutting to shape, then moulding the rim and clearing away the centre part with planes and router"


There's another method using a lathe, equally terse.

I checked the Hayward instructions. They're a little more detailed (around 4 pages), but I don't think they're much more helpful.

Bottom line - you have to hand carve the entire moulding. You either know how to carve (and therefore don't need to be told) or you don't, in which case a few pages about pie crust tables aren't the place to put the instruction!!

So I think Hooper and Wells had it right.
