Thanks for all the replies, they have all been very helpful!
I finished sanding back and removing all the varnish. I made sure to work methodically over the whole piece working up in grit getting it all nice and smooth and removing any signs of the varnish and try to work over the whole piece to remove any sanding difference.
I decided to go with Danish Oil and I am very happy with it. It applied easily and most importantly uniformly, no large light patches but an even absorption. Applied several coats including doing some wet sanding using the oil to get a smooth finish. Overall very happy with it.
To finish the desk marked up the legs, drilled the pilot holes and screwed the legs on. All in all looking very good!
