Oak recommendations to build a bed?

I normally build beds with M&T joints and cut a pocket into the side rail on the inside face to allow a nut and washer to be used. A long coach bolt is then passed through the post and tennon and into the rail. Then the bolt 'head' sits in a pocket in the post and this is covered with a turned 'mushroom' shaped plug which is a tight push fit. This then allows the plug to be removed if the bed has to be moved in the future. HTH. :wink:

I want to build a couple of nice mortise and tenon oak beds, can anybody advise me on a suitable oak(I like the look if English oak ?). Can I make it out of any oak, or does it have to be dried etc? and does it have to be a certain type of 'cut' or can I use any sort of post or board/planks ???

I endorse all of what has been said. But no one has addressed what " cut" you should use. Well there are several alternatives.

Quarter sawn is very decorative with a lovely grain pattern, Straight cut is strong, but plain, Plain sawn is the cheapest, but some planks do tend to cup quite a bit.
