I understand Clico here in UK used to do a sharpening set up to 1" though they are no longer trading. If I can't locate a chisel sharpening set up to 1" or the cost to me is prohibitive.
I think I can double cut width with a 1/2" to get a 1" mortice? So don't need to use or consequently sharpen the 5/8" size.
Can I combine the chisel sizes to get multiple cuts/widths or does it not work like that?

I know about selecting, a hand chisel to the nearest size required.
 
The chisel will always move towards any area where there is no wood, so normally you would plunge the two ends and then cut out the middle. If you cut a Mortice with a double row, the chisel is likely to veer off towards the centre giving the Mortice a slight taper. If at all possible it's best to use a Mortice of the correct size.
 
I am always double cutting without any major problems. Mark your mortices with a knife and a mortice gauge and the chisel locates in the mark and should cut pretty much vertically. You might get a slight taper on the ends of the mortice as the end grain can sometimes deflect the chisel slightly but nothing a quick clean up with hand chisel wouldn't sort.
