Could anyone tell me what has caused these in air dried (outside) beech?
....and what to do about them. Have the culprits gone or is there something still in there ?

Had similar in some logs I milled they were Stag Beetle Larvae found a couple when turning they make a hell of a mess at 2000 rpm when caught with a gouge!!!!!!
 
If that's a 1" board I'd hazard long horn beetles. The holes look quite a size. Not sure re treatment I'm afraid.
 
I've always found that burning on a log burner is the best treatment for anything that makes holes in wood.

Chop out anything with holes and burn.
