Hi, does anyone know which kind of Dremel bit i'd need to buy to be able to do something like this? I have the spiral bits but i think they need a guide to use.... cheers

The dental lab type bits work well for that type of work.
However, this is where the type of tool is also relevant. Dremel tools are okay but only spin to 18,000 rpm, micromotor is a better in that they spin up to 45 to 50,000 rpm, AirPowered dental style drills are ideal as they spin between 350,000 and 400,000 rpm. The reason speed is important is a fast spinning bit is less likely to be influenced by the grain and so you’re able to cut more accurately to your design where as the slower machines will tend to follow the grain and be more ‘grabby’ in use. Also the electric machines tend to be either smaller or don’t use a flex shaft so more comfortable for long periods.
I’m fortunate in that I have both micro motor and dental tools. The cutters I use are the ones below would be ideal for this type of work but may need more patience in the dremel and for the dental ones, may be too fragile / slow but you could try.
Other factor is wall thickness, and to lesser extent timber choice. Even wall, Max 3mm is what you’re aiming for and preferably a even, close grain timber like sycamore is ideal.

'They spin between 350,000 and 400,000 rpm' wow.... that's amazing, i'm guessing at that speed whilst using nice sharp bits, you can create really precise shapes even in super hard woods without any burning..... unfortunately i currently only possess an old 'steam powered Dremel' so the best bits for the job are what i need.....

btw - if you can live with a right angle head (like dentists use rather than the more ergonomic nsk presto style handpiece), amd you have access to compressed air then you can get NSK ‘style’ handpieces for not much money from the normal auction site. A good and cheap way to have a play.
