Can anyone recommend a good hacksaw blade for stainless steel? I have some 50mm tube and am looking to cut down the length.

Depends on the wall thickness but eclipse 18 tpi or 24tpi if its thin wall would be fine.

I thought grinder initially but it will likely discolour the steel.
You are likely to get a better finish and straighter cut with the angle grinder, let likely to distort it as well since it's quite thin walled.
If you put the tube in a water bath you should be able to avoid discolouring it, the thin slitting blades don't impart a lot of heat in the first place.

I am cutting it into short lengths of about 5” first and then cutting the slot. I may give the grinder ago and see if it works as I have a bit to play with.
I doubt it will get hot enough with the grinder to cause any discoloration, especially if you use a thin disc specifically for stainless. I use these for most things as they last a lot better than the ordinary ones for cutting mild as well.
Sandvik but easier if suitable to use a grinderette with a slitting disc.
If you have a good quality polish, you can generally polish off the discoloration.
