I personally would use Food safe Mineral Oil, (Liquide Paraffin BP) Lighter grade from the likes of Chestnut finishes should penetrate more readily than standard products from a pharmacy.
 
Once oiled, a topcoat of home brew wax made with mineral oil and pure beeswax gently melted together helps.
 
Either Osmo Top oil (available in matt or satin) or Chestnut Food Safe Oil. I know some people who use Odies Oil / wax, but it's f****** expensive.
 
I use olive oil, or olive oil and beeswax at 4:1. I also tend to carve Sunday joints on chopping boards, so lard would be in the mix, too - but only incidentally.
 
I have used 4 costs of butchers block oil, which I think is just mineral oil. Then two coats of home made mineral oil-beeswax mixture wax.

I've heard some people on here swear by olive oil as well. Want to try it sometime.

loads of options but I keep coming back to chestnut foodsafe oil, it's worth every penny imo.
