I've made a few,find them quite fun to make - along with the challenge of getting a matching set!
Yes,only ever seen them end-grain - think the last ones I made were 45mm diameter,with a 40mm cup;don't think side grain would be strong/stable enough.

As Andrew said, end grain would be really weak in any stem. Same as a goblet really only shorter.
