I can only assume that there are a lot of people out there who have bid and paid way over the odds for an item... in fact I'm sure it's true. A little bit of auction fever!
I have noticed that people will keep bidding on an item, pushing the price up, even though the same item, often from the same seller, is available still at a much lower price!

Part of my problem I guess is that I can't be bothered to stay in front of the computer to do it all, or stay up half the night for it!

i believe that ebay allows you to bid by text message now, so if your not infront if the computer you can still place a bid near the end of the auction. I also remember seeing some software that you can get that will automatically put a bid of your choosing in at the last second by conversing directly with the ebay API

It is known as Sniping - not sure if ebay approve of it or not but there are various programs available that will do this - some shareware/freeware. Have tried it with mixed results.

I use "Auction Sentry" you can download it for a weeks free trial, I liked it and ended up buying it for $14. You can choose down to the second when to place your bid and it offsets any time difference between your computer clock and ebays clock so the bid goes in at the exact time of your choosing.
