Ok a really stupid question
Why bend the tool? Without getting into the physics the change in angle affects the force applied, more hard work.
Having had projects where I needed a better angle of approach to a work piece I just re ground and sharp ended to a better angle
Ok as said why change angle, I must have missed something

The long flat surface aids in flattening a recessed area in the same way a #7 or #8 plane can plane a long surface straight and flat. Taking fine shavings off to flatten without dips etc that a regular chisel can't do because the handle prevents the blade from laying flat. It is a specialized tool for woodwork cabinet makers usually don't need but essential for pattern makers working to close tolerances.
