Applying glue to both sides of a joint?

Palette knives come in hundreds of shapes and sizes.
You only need one or two (don't buy "a set" fer gawds sake!). Steel seems to be better than stainless as it is springier and lasts longer (forever). Most glues easy to clean off even when set hard.

I use my palette knives as palette knives! I did once put one to use in the shop but inadvertently left it with glue on it. It cleaned off easily, but it had gone a bit rusty...
So use a quality 'trowel'.

Or you could use the wedges to put the glue on which get hammered into the joint afterwards. lol
