    I should add that at least Workshop Heaven states their postage policy clearly in their terms and conditions. Many suppliers don't own up until you've registered, created an order and are on the point of committing.

    I should have more confidence. Less than 25 degrees all-in, the angle between the two bevels. Its less than 25, but more than 20.

    Now you've got me doubting because I can't remember exactly. That knife has a fairly thick parallel blade, and a simple single bevel on each side at the cutting edge, so should be easy to measure, now I'm wondering whether I was measuring only half (ie bevel to opposite face, not bevel to bevel).

    That's interesting. I think mine are at the shallow end of that range, and for example my fish knife came from the supplier sharpened to an all-in angle of less than 25 degrees.

    By the way, what do the experts reckon is the correct angle for various types of knives? A very acute angle is easily damaged or blunted, but a very obtuse angle make it difficult to use, for example you can't take a shaving.
