+1 for the Crushgrind. The standard mechanism calls for a recess but it is easier to use epoxy adhesive to fix them in place. Several YT videos detail how.

Perhaps you are referring to hot water cylinders removed. Probably a direct cold feed to downstairs tap which is frozen, but a cold water tank on the roof which will feed all the others, which as Phil says will eventually run out. The boiler would also be supplied from the incoming main but...

I built the same bench and it is rock solid after eight years. The only difference I can see is that the aprons on mine are secured at three points on each leg whereas yours seem to have one coach bolt only. Perhaps?
