Wide or narrow boards...?

Hello all...

A query...

I'm making a top for a kitchen island.

It's around a meter square and I have some Ash boards 300/350 wide.

I was planing to use three across the width but now I'm wondering if there might be a benefit in cutting them down to 150mm and alternating the growth rings?

It occurred to me that a kitchen environment might make wood a little more susceptible to movement...?

I've had the boards for 5 or 6 years and they're well-seasoned and settled.

Any thoughts...?

No need to make extra work do them 3 wide perfectly fine.
