sinking down Gouge

I have watched Ken Hawley Collection Trust here is the link to the video ,the video is about the last wooden bench plane maker at W Marples and Albert Bock the plane maker uses a sinking down Gouge to remove the majority of the waste need to be removed , I have not heard of a sinking down Gouge before and there isn't much on the internet about them and also Albert Bock used a sinking down chisel to flatten and pair with are sinking down Gouge and sinking down chisel just very heavy versions of Gouge and chisel I would like to know be because I think a sinking down Gouge would useful for removing waste fast and just a useful tool ,

and it a great video if you haven't seen it.
 
It's just a heavy relatively flat incannel gouge. For whatever reason, an incannel gouge is a lot easier going through end grain than a flat chisel.

I'm sure the reason he uses a gouge with a little bit of curvature is because it's just easier through the wood (it's generally not forcing fibers of wood to separate, but rather severing everything - so the splitting out that a chisel has to do is something that a gouge does not).
