You want a moderately hard, stable, hard wood. In the UK beech was the historic choice, but birch works OK, and boxwood or fruitwoods were used for small planes.

Mahogany (in its various types) would probably be OK, and is easy to find.

In the USA, Maple would be a good choice, in France the premium choice is cormier or hornbeam.

If you google krenov style planes a lot of blogs on how to make them pop up. That is how i did it for my oak plane :)
