Original foam is finer with a thin colour coat applied to the surface. It cuts easily with a scalpel and is well suited to collectibles, electrical and measuring tools, photographic etc.

Easy peel is a coarser foam laid down in layers. This is more durable, grease resistant etc and I'd say better for mechanical and power tools.
I've used both and I'm a fan.
Hint: scalpel blades cut amazingly well when they are fresh but blunt quickly. That's just how it is. Expect to cut in say 3 or 4 tools and you will then feel the blade just begin to drag. It will still be super sharp, more than any other blade in your workshop, but not "cut you as soon as look at you" sharp like a scalpel fresh out of the packet. They are really cheap so buy a handful of 5 packs, change them frequently and toss the used blades in a tin for less critical work.
I make the first cut around whatever it is about half a blade length (8-10mm) deep. This is as deep as you can go without trying to pull the front part of the handle through the cut. Once you have this outline, you can begin to peel and carve to deepen the cutout. You'll get the hang of it quickly. Get some and have a go
