Whatever works, I guess. I usually put my planes on a flat surface, put the iron in, lift it just a bit (just by experience) and insert the wedge and then set the depth on whatever the plane is on.

Nothing wrong with sighting, either.

Not a fan of the plane with the stanley iron and the cross pin instead of taper and abutments, though! The rest of it (setting) is pretty much whatever you figure out works best for you along the way, and familiarity with a given plane.
