I have decided to sand the table back to the wood and refinish using wipe on poly.The table is Ash, and my question is
Do I use sanding sealer?

No. Oil (solvent) based polyurethane varnish, which is what you're using because it's a wipe on version, and water borne polyurethane varnishes are their own sealer or base coat. Slainte.
