Hi All. I'm looking at a job that is part of a much bigger project restaurant. The worktops there will be made from Hinoki - a Japanese cypress. I think it has antiseptic qualities and is apparently quite ubiquitous in Japan. I will have to make various bits of furniture to compliment this Hinoki. The clients are suggesting selected Maple boards to match the Hinoki. I'm not convinced and don't want to have to plane up vast amounts of maple for the odd board that may match. Anyone got any experience with how it looks in the real world and possible complimentary matching species. Importing it is not an option.

From a quick google of Hinoki it looks quite like southern yellow pine (and nothing like maple) Hard to say though without seeing the real thing
