dark chopping board wood

Hi

I'm making a chopping board from sycamore. What hard-wearing, food-safe wood, that's naturally dark in colour, can I use for some contrasting detailing?

The other popular chopping board wood seems to be beech, but that's not really much of a contrast.

What about sapele? It is a dark red and is close grained.

I have made two using sapele and beach and they look great when finished!
 
As luck would have it, I have some Sapele in the shed! Sadly, my pockets aren;t deep enough for teak. I dare say iroko would be too soft?

Iroko isn't food safe as far as I am aware. Apparently it is poisonous, I was told this and also read it online but I'm not sure if it is 100%, but to be safe I have never used it.

I must be dead then!!! The dark wood in the pic below is Iroko and this has been in regular use for about 6 years now. I cant believe that enough of the wood gets in the food for it to be a problem especially if as this one it is end grain.
